3: STRAIN THE TANNIN TEA

When the water has turned a deep brownish red color, and is less than 2 cups (480 ml), it is time to strain it. Take the pot off the heat and let it cool down. Next, pour it through a fine-mesh strainer into a funnel placed in a pint jar. (You can use a bandana or an old T-shirt for this if you need to. In that case, use a rubber band to tie the fabric around the edge of the jar rim so it doesn’t move around when you pour the acorn tea through it.)

Willow Bark Ink!

This same recipe can be used to make ink from the bark that you scrape off willow sticks when you make charcoal artist sticks (see Project 12). Willow bark is full of tannic acid, so you can use it instead of acorns. This ink has a pleasant and distinctively “willowy” smell and is a joy to work with.
